What is the function of Stevioside in the food industry?

1. Sweetness and flavor

The sweetness of stevioside is about 300 times that of sucrose, and the taste is similar to sucrose, with pure sweetness and no odor, but the residual taste lasts longer than sucrose. Like other sweeteners, the sweetness ratio of stevioside decreases with the increase of its concentration, and it is slightly bitter. Stevioside has a higher sweetness in cold drinks than stevioside with the same concentration in hot drinks. When stevioside is mixed with sucrose isomerized syrup, it can give full play to the sweetness of sugar. Mixing with organic acids (such as malic acid, tartaric acid, glutamic acid, glycine) and their salts can improve the sweetness quality, and the sweetness multiple of stevioside is increased in the presence of salt.

2. Heat resistance

Stevioside has good heat resistance, and its sweetness remains unchanged when heated below 95 ℃ for 2 hours. When the pH value is between 2.5 and 3.5, the concentration of stevioside is 0.05 %, and the stevioside is heated at 80° to 100 ℃ for 1 hour, the residual rate of stevioside is about 90%. When the pH value is between 3.0 and 4.0 and the concentration is 0.013%, the retention rate is about 90% when stored at room temperature for six months, and the 0.1% stevia solution in a glass container is exposed to sunlight for seven months, the retention rate is above 90%.

3. Solubility of stevioside

Stevioside is soluble in water and ethanol, but insoluble in organic solvents such as benzene and ether. The higher the degree of refining, the slower the dissolution rate in water. The solubility in water at room temperature is about 0.12%. Due to the doping of other sugars, sugar alcohols and other sweeteners, the solubility of commercially available products varies greatly, and it is easy to absorb moisture.

4. Bacteriostasis

Stevioside is not assimilated and fermented by microorganisms, so it has antibacterial effect, which makes it widely used in pharmaceutical industry.
